El Dorado of Indian Summers | Because mango season is less a season and more of a vibe. Mangoes have this magical quality as far as I am concerned, being a kid. That magic was more notable to be, in my earliest memories, than if anywhere other than some cold luscious bowl of Aamras. I recall my mother, in that blind devotion we all have for mangoes; how she peeled so carefully, pressing out every drop of pulp, I would surround ,myself with those fat soft puris soaking it up and gulping it down like a ritual. And truthfully, it was Blissful, thick, and so yummy— Aamras is not just another dessert. Pure mango celebration

Traditional Aamras Recipe (With Variations)

Prep Time: 10 minutes

Serves: 3–4

Ingredients

  • 3 large ripe Alphonso or Kesar mangoes (or 1.5 cups mango pulp)
  • 1–2 tbsp sugar (optional, depending on mango sweetness)
  • ¼ tsp cardamom powder (optional)
  • A pinch of saffron strands (optional)
  • ¼ cup chilled milk or water (to adjust consistency)

 Instructions

1️⃣ Prepare the Mangoes

  • Wash, peel, and deseed the mangoes.
  • Scoop out the pulp and transfer it to a blender.

2️⃣ Blend the Magic

  • Add sugar (only if needed), cardamom powder, and saffron if using.
  • Blend until completely smooth and silky.
  • Add a little chilled milk or water to adjust consistency (optional).

3️⃣ Chill & Serve

  • Refrigerate for 1–2 hours for best flavor.

Serve cold with puris, or enjoy it as a dessert in a bowl or glass.
