Sharing one tasty Desi Macaroni recipe, an Indian version of the classic macaroni is ideal for a quick meal, tiffins or fussy evening snacking. It’s spicy, tangy, veggie loaded and super comforting!

Desi Style Masala Macaroni Recipe

Ingredients

Base:

  • 1½ cups elbow macaroni
  • Water to boil + salt
  • Veggies (customizable):
  • 1 small onion, chopped finely
  • 1 small tomato (cut into tiny pieces)
  • ½ capsicum (chopped)
  • ¼ cup finely grated or chopped carrot
  • ¼ cup green peas
  • 1 green chili (slit/chopped, optional)
  • 1–2 tbsp oil or butter

Spices:

  • ½ tsp mustard ½ tsp mustard seeds (optional) (optional)
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • 1 tsp pav bhaji masala (optional but highly recommended!)
  • Salt to taste
  • 1–2 tbsp tomato ketchup or chilli sauce
  • A splash of lemon juice

Instructions

Cook the Pasta

Cook macaroni over medium high heat in salted water until al dente (approx.. 7-8 mins).

Drain and rinse in cold water to cool; drain. Set aside.

Make the Masala Base

  • Make the Masala Base
  • Throw in cumin
  • When they splutter add onions and green chilies. Sauté till soft.
  • Stir in ginger-garlic paste and sauté for 30 seconds.
  • Add tomatoes and cook till tomatoes are mushy.
  • Mix turmeric, chili powder, garam masala , pav bhaji masala and salt.

Add Veggies

  • Toss in carrots, peas and capsicum. Cook for 3–4 mins, or until half soft.
  • You can also add a little bit of water and put a lid on to.

Toss in Macaroni

  • Add cooked macaroni to the masala.
  • Add ketchup/chili sauce for tang and flavor.
  • Mix well and cook for 2–3 minutes till everything is coated and heated through.
  • Finish with lemon juice and fresh coriander.

Serving Suggestions

  • Serve hot as a main dish or tiffin box filler.
  • Pair with raita or a cold beverage like buttermilk or mango lassi.
  • Top with grated cheese for a fusion twist!
