Desi Style Masala Macaroni Recipe

Ingredients
Base:
- 1½ cups elbow macaroni
- Water to boil + salt
- Veggies (customizable):
- 1 small onion, chopped finely
- 1 small tomato (cut into tiny pieces)
- ½ capsicum (chopped)
- ¼ cup finely grated or chopped carrot
- ¼ cup green peas
- 1 green chili (slit/chopped, optional)
- 1–2 tbsp oil or butter
Spices:
- ½ tsp mustard ½ tsp mustard seeds (optional) (optional)
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- ¼ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp garam masala
- 1 tsp pav bhaji masala (optional but highly recommended!)
- Salt to taste
- 1–2 tbsp tomato ketchup or chilli sauce
- A splash of lemon juice
Instructions
– Cook the Pasta
Cook macaroni over medium high heat in salted water until al dente (approx.. 7-8 mins).
Drain and rinse in cold water to cool; drain. Set aside.
– Make the Masala Base
- Make the Masala Base
- Throw in cumin
- When they splutter add onions and green chilies. Sauté till soft.
- Stir in ginger-garlic paste and sauté for 30 seconds.
- Add tomatoes and cook till tomatoes are mushy.
- Mix turmeric, chili powder, garam masala , pav bhaji masala and salt.
– Add Veggies
- Toss in carrots, peas and capsicum. Cook for 3–4 mins, or until half soft.
- You can also add a little bit of water and put a lid on to.
– Toss in Macaroni
- Add cooked macaroni to the masala.
- Add ketchup/chili sauce for tang and flavor.
- Mix well and cook for 2–3 minutes till everything is coated and heated through.
- Finish with lemon juice and fresh coriander.
Serving Suggestions
- Serve hot as a main dish or tiffin box filler.
- Pair with raita or a cold beverage like buttermilk or mango lassi.
- Top with grated cheese for a fusion twist!
